Passion (Lilikoi) & Lime Cheesecake


The Recipe has arrived- (I couldn't resist Putin on that horse) !
Being true to this site..I've included a poem below..


After experimenting around and winging it a bit I found this tastes the best.. if you do give it a shot, I hope you enjoy it as much as me -(You can cut it back or in half)




Believe it or not, they make a ton of juice (I use an old Acme juicer). As you can see, there isn't much difference as far as color variation inside..the outside is just added visual.
Even the little black seeds are delightful to leave in if your making jam..along what you see-pectin (adhering to skin surrounding the fruit) - you can soak that overnight then chop it up..it looks lovely-
(but that's jam)..




Recipe:
3- 8 ounce packages cream cheese, room temperature
1 2/3 cups sugar
2 TB cornstarch
2 teaspoons grated lime peel (I probably use more)
1 1/2 teaspoons grated lemon peel

I don't like messing around too much so I just stick to the lime.
3 large eggs -(bring to room temp w/the cream cheese)
1 cup sour cream

In a large bowl with an electric mixer, beat cream cheese and sugar until smooth, beat in the eggs, one at a time, beating well after each addition. Beat in the sour cream, corn starch, lime juice and vanilla- (I skipped that).. beat the mixture until it is smooth.


You can line it with wax paper or not..but bake it at 300 or 325F for about 1 hour. This low temp does keep it from cracking.

The Curd-
1/2 cup of sugar
1 1/2 Tb butter
2 Tb's of fresh squeezed lime juice
1/2 cup of unsweetened Lilikoi juice..
now if you don't have Passion (no pun), just use all limes or whatever your heart desires..but the limes are down right tangy and delicious..I've mixed Mango in too!
5 egg yolks (yes, you can use less)

Mix together the sugar, lime and passion fruit in a small saucepan and bring it to a boil. Turn it down low and wisk continuously for about 7 minutes, then add the butter. Turn it off and let it cool, then pour it into a bowl and chill it until your ready to use.

Thinking that lime is surely enough?..
You may even consider it a little obscene,


Only two drops
Of this bright cheery green
Will make your mouth water
You'll believe your dreaming..in fact after looking back, I realized it was my son on that horse!


But gosh
I hadn't even added
The whipped cream!

Ya..it is. He went back with an Uncle to visit his Grandma & Aunt who has a ranch in Illinois..everyone was teasing him cause of that recent snapshot of Putin. Have a great weekend-

Eh..I appreciate that..I had a nasty sprain on the same ankle that took over two years to really heal and I'm for some reason (must of been the way I fell on it)..it's not the case..I'm already walking around a bit stiff but grateful..thank God huh!
